Swedish Medical Center has become the first hospital to serve vegan chicken nuggets, but it’s not the first to provide vegan options.
The vegan chicken nuggets are produced by local startup Seattle Food Tech and made with textured wheat, flavoring, cornstarch, oil, and corn breading. The company uses a proprietary processing technique that creates a texture similar to that of animal-based nuggets.
Corporate Executive Chef Zachary Schwab said:
We’re excited to be the first hospital in the nation to offer Seattle Food Tech’s Crispy Nuggets. This partnership is perfectly in line with our goal of providing delicious, sustainable options for our guests every day.
Hospitals across the country have started introducing more plant-based options to patients.
Last year, NYC Health + Hospitals/Bellevue and Brooklyn borough president Eric L. Adams launched the Plant-Based Lifestyle Medicine Program, which helps patients switch to a whole-foods, plant-based diet to improve, and in some cases even reverse, chronic illnesses such as heart disease, diabetes, obesity, high cholesterol, and high blood pressure.
The initiative serves as an intensive resource for adult patients who want to lower their cardiometabolic risk by changing their diets to include more legumes, whole grains, fruit, vegetables, nuts, and seeds and to reduce animal products, fried foods, refined grains, and added sugars.
In a statement, Adams said:
This clinic will champion a new paradigm for health care in New York and beyond, one in which patients gain freedom not only from debilitating, life-threatening chronic diseases but also from the harsh side effects and reduced quality of life associated with traditional, less effective treatments. The power of plant-based diets allowed me to reverse my Type 2 diabetes, and I’m elated that through this clinic, it will do the same—and more—for countless New Yorkers.
These programs to introduce more plant-based options don’t just have health benefits; they also help protect the planet and spare farmed animals a life of misery.
