On St. Patrick’s Day, It’s Easy Being Green

Skipping meat is not only a compassionate choice, it’s also great for the environment. So this St. Patrick’s Day, forgo animal products and truly embrace the color green!

  • Colcannon is a traditional Irish favorite. Here’s a recipe that calls for our favorite vegetable, kale!
  • While you’re at it, you might want to toss some shepherd’s pie into the mix. Indulge in this incredible meat-free version.
  • And let’s not forget the Irish soda bread. This recipe substitutes eggs with Ener-G egg replacer and is sure to be a hit.
  • Finally–and we’re just throwing this out there–if you’re doing the health thing, why not start your own tradition and toast to Saint Patrick with this vitamin-packed green juice.
